One PDF, nothing left out
Everything on this site, typeset properly and bound: twelve illustrated technique chapters, eighty-five classical recipes ordered easiest first, and the whole reference layer — the sauce tree, the larder, plating and service, and a lexicon of a hundred and fifty-three French kitchen terms.
The book is not a summary of the site and it is not an upsell. It is the same material, arranged as a book wants to be arranged — in eight parts that run from how to hold a knife to how to laminate pastry by hand, each chapter opening on a right-hand page, every diagram redrawn at print resolution, and a contents page that actually tells you where things are.
Everything on this website stays free, ungated and complete. The book exists because a kitchen is a bad place for a screen, and because some things are worth owning.
What is inside
Part One — The HandLa Main
Start Here, The Honest Kitchen, Knife Skills, Heat & Fat, Seasoning. Everything the hand does before technique begins.
Parts Two & Three — Foundations and SaucesLes Fondements, Les Sauces
Eggs and stocks, then sauce making, emulsions and the full sauce tree with every derivative of the five mothers.
Parts Four & Five — Heat and the BenchLa Cuisson, Le Fournil
Searing and roasting, braising, poaching and steaming, vegetables, and the pastry bench worked entirely by hand.
Parts Six to Eight — Table, Recipes, LexiconLa Table, Les Recettes, Le Lexique
The larder, plating and service, eighty-five recipes across eight categories, and the glossary.
Every technique in the book was written to be executed with one 20 cm chef's knife, a board, a heavy frying pan, a saucepan, a large pot, a sieve, a wooden spoon, a balloon whisk, a mixing bowl, an oven and a hob. Where the classical method leans on a machine, the hand method is given instead, and what changes is said plainly.

You cannot scroll with butter on your hands. That is the entire argument for a book.
